Fish is normally a dish that is welcomed by frown or a yuck or “fish again” comment by my girls when it is served. I have tried my best to serve it up in a way that they will enjoy it. To my surprised and astonishment, when I made this Honey Soy Salmon dish they actually asked for seconds and a repeat the following week!
INGREDIENTS for 2 servings:
- 12 oz Salmon
Marinade:
- 4 cloves of garlic minced
- 2 teaspoons ginger minced
- 1/2 cup less sodium soya sauce
- 1/4 cup honey
- Sesame and green onions to sprinkle on top
INSTRUCTIONS:
- Wash the salmon pieces and place in a sealable bag
- In a measuring cup, mix together the marinade ingredients.
- Pour half of the marinade on the salmon and save the other half for later.
- Let the salmon marinade for 30 minutes or more.
- In a pan, or my my choice of appliance, the George Foreman grill, cook the salmon to your liking and discard the remaining marinade. Typically this would mean about 3-4 mins on each side or about 4 minutes on the George Foreman grill.
- Plate the salmon
- Cook the remaining marinate by heating it up in a sauce pan and reduce.
- Serve the salmon with a side of veggies and rice.
